Description
Simple and delicious apple cinnamon muffins, perfect for breakfast or a snack. These muffins are made without bananas.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 medium apple, peeled and diced
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together milk, applesauce, oil, egg, and vanilla.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Gently fold in diced apple.
- Fill muffin cups about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack.
Notes
- You can add a streusel topping for extra flavor.
- Store muffins in an airtight container at room temperature for up to 3 days.
