Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon

- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar

- For the Crumb Topping:
- 1 cup all-purpose flour
- 1/2 cup packed brown sugar
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1 teaspoon ground cinnamon
- For the Drizzle:
- 1/2 cup chopped peeled apples
- 2 tablespoons granulated sugar
- 1 tablespoon unsalted butter
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Add sour cream and mix until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in the chopped apples.
- Pour the batter into the prepared cake pan.
- Prepare the crumb topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter with a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping evenly over the cake batter.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- While the cake is baking, prepare the drizzle: In a small saucepan, combine chopped apples, sugar, and butter. Cook over medium heat, stirring occasionally, until apples are softened and the mixture is syrupy, about 5-7 minutes. Stir in cinnamon.
- Remove the cake from the oven and let it cool in the pan for 10 minutes.
- Drizzle the warm apple mixture over the cake.
- Let the cake cool completely before serving.
