Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 2 cups chopped apples (about 2 medium apples)
  • For the Drizzle:
  • 1 cup chopped apples
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 2 tablespoons water


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, granulated sugar, baking soda, salt, and cinnamon.
  3. Cut in the softened butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, beat the eggs and vanilla extract.
  5. Add the egg mixture and sour cream to the dry ingredients. Mix until just combined.
  6. Gently fold in the chopped apples.
  7. Pour the batter into the prepared cake pan and spread evenly.
  8. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. While the cake bakes, prepare the drizzle. In a small saucepan, combine the 1 cup chopped apples, brown sugar, lemon juice, cinnamon, and water.
  10. Cook over medium heat, stirring occasionally, until the apples are tender and the sauce has thickened, about 10-15 minutes.
  11. Once the cake is baked, let it cool in the pan for 10 minutes.
  12. Invert the cake onto a wire rack.
  13. Spoon the warm apple cinnamon drizzle over the top of the cake.
  14. Serve warm or at room temperature.
