Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream
- 2 cups chopped apples (about 2 medium apples)
- For the Drizzle:
- 1 cup chopped apples
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 2 tablespoons water
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, granulated sugar, baking soda, salt, and cinnamon.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- In a separate bowl, beat the eggs and vanilla extract.
- Add the egg mixture and sour cream to the dry ingredients. Mix until just combined.
- Gently fold in the chopped apples.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake bakes, prepare the drizzle. In a small saucepan, combine the 1 cup chopped apples, brown sugar, lemon juice, cinnamon, and water.
- Cook over medium heat, stirring occasionally, until the apples are tender and the sauce has thickened, about 10-15 minutes.
- Once the cake is baked, let it cool in the pan for 10 minutes.
- Invert the cake onto a wire rack.
- Spoon the warm apple cinnamon drizzle over the top of the cake.
- Serve warm or at room temperature.
Notes
- Use firm apples like Honeycrisp, Gala, or Fuji for best results.
- Adjust cinnamon to your preference.
- The drizzle can be made ahead of time and gently reheated.
