Ingredients

  • 4 cups sliced apples (about 4-5 medium apples)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon lemon juice
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 recipe for double pie crust (enough for a 9-inch pie)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sliced apples with cinnamon, nutmeg, flour, granulated sugar, brown sugar, and lemon juice.
  3. Line a 9-inch pie plate with one of the prepared pie crusts.
  4. Pour the apple filling into the crust.
  5. Dot the top of the filling with the cold butter cubes.
  6. Place the second pie crust over the filling. Trim and crimp the edges to seal.
  7. Cut vents in the top crust or create a lattice top.
  8. Brush the top crust with the beaten egg wash and sprinkle with coarse sugar, if desired.
  9. Bake for 20 minutes at 400°F (200°C).
  10. Reduce the oven temperature to 375°F (190°C) and continue baking for another 30-40 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Let the pie cool for at least 2-3 hours before slicing and serving.

  • Use a mix of apple varieties for a more complex flavor.
  • Ensure butter is very cold for a flaky crust.
  • Allow pie to cool completely to prevent a runny filling.
