Description
A hearty autumn soup featuring Italian sausage, cheese tortellini, and fresh spinach.
Ingredients
- 1 lb Italian sausage
- 1 package (9 oz) cheese tortellini
- 4 cups fresh spinach
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Brown sausage in a large pot over medium heat.
- Add onion and garlic, cook until softened.
- Pour in chicken broth and diced tomatoes.
- Stir in tortellini and seasonings.
- Simmer for 10 minutes until tortellini is tender.
- Add spinach and cook until wilted.
- Serve hot.
