Ingredients
- 1 pound elbow macaroni
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup all-purpose flour
- 3 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 4 cups shredded sharp cheddar cheese
- 1 cup shredded Gruyere cheese
- 4 ounces cream cheese, cut into cubes
Instructions
- Preheat your oven to 375°F (190°C).
- Cook macaroni according to package directions. Drain well.
- In a large saucepan, melt butter over medium heat. Whisk in flour until smooth.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly. Cook for 2 minutes until thickened.
- Remove from heat. Stir in salt, pepper, and paprika.
- Add cheddar cheese, Gruyere cheese, and cream cheese. Stir until cheeses are melted and sauce is smooth.
- Add cooked macaroni to the cheese sauce. Stir to combine.
- Pour macaroni and cheese into a greased 9×13 inch baking dish.
- Bake for 20-25 minutes, or until bubbly and lightly golden.
Notes
- For a crispier topping, you can add breadcrumbs mixed with melted butter on top before baking.
- Feel free to add other cheeses like Monterey Jack or Colby Jack.
