Ingredients

  • 1 pound elbow macaroni
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 4 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyere cheese
  • 4 ounces cream cheese, cut into cubes


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook macaroni according to package directions. Drain well.
  3. In a large saucepan, melt butter over medium heat. Whisk in flour until smooth.
  4. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly. Cook for 2 minutes until thickened.
  5. Remove from heat. Stir in salt, pepper, and paprika.
  6. Add cheddar cheese, Gruyere cheese, and cream cheese. Stir until cheeses are melted and sauce is smooth.
  7. Add cooked macaroni to the cheese sauce. Stir to combine.
  8. Pour macaroni and cheese into a greased 9×13 inch baking dish.
  9. Bake for 20-25 minutes, or until bubbly and lightly golden.

Notes

  • For a crispier topping, you can add breadcrumbs mixed with melted butter on top before baking.
  • Feel free to add other cheeses like Monterey Jack or Colby Jack.
