Ingredients
- 1 1/2 cups ginger snap crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree (not pumpkin pie filling)
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, combine ginger snap crumbs and 1/4 cup granulated sugar. Stir in melted butter until well combined. Press mixture evenly into the bottom of a 9-inch springform pan.
- Bake crust for 8-10 minutes. Remove from oven and let cool slightly. Reduce oven temperature to 325 degrees F (160 degrees C).
- In a large bowl, beat cream cheese, 1 1/4 cups granulated sugar, brown sugar, cinnamon, ginger, nutmeg, cloves, and salt with an electric mixer on medium speed until smooth.
- Beat in eggs one at a time, mixing just until each is incorporated. Stir in vanilla extract and pumpkin puree.
- Pour filling over the prepared crust.
- Bake for 50-60 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Remove cheesecake from oven and let it cool completely on a wire rack.
- Chill cheesecake in the refrigerator for at least 4 hours, or preferably overnight, before serving.
