Description
A delicious and healthy high-protein white chicken chili recipe.
Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 (15 ounce) can great northern beans, rinsed and drained
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp oregano
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- Heat olive oil in an Instant Pot using the sauté function.
- Add chicken and cook until browned.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in cannellini beans, great northern beans, chicken broth, cumin, chili powder, and oregano.
- Season with salt and pepper.
- Close the lid and set the valve to sealing.
- Cook on high pressure for 10 minutes.
- Allow for a natural pressure release for 10 minutes, then release any remaining pressure.
- Shred the chicken with two forks.
- Serve with your favorite toppings.
Notes
- Adjust spices to your taste.
- For a creamier chili, add a dollop of sour cream or cream cheese at the end.
- You can use pre-cooked chicken to save time.
