Description

A delicious and healthy high-protein white chicken chili recipe.


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can great northern beans, rinsed and drained
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro


Instructions

  1. Heat olive oil in an Instant Pot using the sauté function.
  2. Add chicken and cook until browned.
  3. Add onion, garlic, and bell pepper. Cook until softened.
  4. Stir in cannellini beans, great northern beans, chicken broth, cumin, chili powder, and oregano.
  5. Season with salt and pepper.
  6. Close the lid and set the valve to sealing.
  7. Cook on high pressure for 10 minutes.
  8. Allow for a natural pressure release for 10 minutes, then release any remaining pressure.
  9. Shred the chicken with two forks.
  10. Serve with your favorite toppings.

Notes

  • Adjust spices to your taste.
  • For a creamier chili, add a dollop of sour cream or cream cheese at the end.
  • You can use pre-cooked chicken to save time.
