Ingredients
- 2 pounds sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter, softened
- 1/4 cup honey
- 1/4 cup milk or heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Place the cubed sweet potatoes in a large pot and cover with water.
- Bring to a boil and cook for 15-20 minutes, or until fork-tender.
- Drain the sweet potatoes and return them to the pot.
- Add the softened butter, honey, milk (or cream), salt, and pepper to the pot.
- Mash the sweet potatoes with a potato masher or an electric mixer until smooth and creamy.
