Delicious and refreshing Lemon Raspberry Bars.
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 3/4 cup (1 1/2 sticks) cold unsalted butter, cut into cubes
- 1 (14 ounce) can sweetened condensed milk
- 2 large eggs
- 1/2 cup lemon juice
- 1 teaspoon lemon zest
- 1 cup fresh raspberries
- Powdered sugar, for dusting
Instructions
- Preheat oven to 350°F (175°C).
- Whisk together flour, powdered sugar, and salt.
- Cut in butter until mixture resembles coarse crumbs.
- Press into a 9×13 inch baking dish.
- Bake for 15-20 minutes.
- Whisk together sweetened condensed milk, eggs, lemon juice, and zest.
- Pour over baked crust.
- Top with raspberries.
- Bake for 20-25 minutes.
- Cool completely.
- Dust with powdered sugar.
- Cut into bars.
Notes
- For best results, use fresh raspberries.
- Let the bars cool completely before cutting.
- Store in an airtight container in the refrigerator.
