Ingredients

  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 packet (1 ounce) taco seasoning
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sour cream, salsa, chopped cilantro, avocado


Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add kielbasa and cook until browned, about 5 minutes. Remove kielbasa from skillet and set aside.
  3. Add chicken to the skillet and season with taco seasoning. Cook until browned, about 5-7 minutes.
  4. Stir in the orzo pasta and chicken broth. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
  6. Stir in the black beans, corn, and cooked kielbasa. Cook uncovered until orzo is tender and most of the liquid has been absorbed, about 5-7 more minutes.
  7. Stir in cheddar cheese until melted.
  8. Serve hot, with your favorite toppings.
