Description
A quick and flavorful one-pan orzo pasta dish featuring kielbasa sausage and taco-seasoned chicken, perfect for a weeknight meal.
Ingredients
- 1 tablespoon olive oil
- 1 pound kielbasa sausage, sliced
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 packet (1 ounce) taco seasoning
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn
- 1/2 cup shredded cheddar cheese
- Optional toppings: sour cream, salsa, chopped cilantro, avocado
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat.
- Add kielbasa and cook until browned, about 5 minutes. Remove kielbasa from skillet and set aside.
- Add chicken to the skillet and season with taco seasoning. Cook until browned, about 5-7 minutes.
- Stir in the orzo pasta and chicken broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 10 minutes, stirring occasionally.
- Stir in the black beans, corn, and cooked kielbasa. Cook uncovered until orzo is tender and most of the liquid has been absorbed, about 5-7 more minutes.
- Stir in cheddar cheese until melted.
- Serve hot, with your favorite toppings.
Notes
- For a healthier option, use reduced-fat cheese and serve with a side of salad.
- Adjust taco seasoning to your spice preference.
