Description

Easy and quick blender banana muffins without Greek yogurt.


Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: chocolate chips or nuts


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine bananas, eggs, milk, oil, and vanilla in a blender. Blend until smooth.
  3. In a separate bowl, whisk together flour, sugar, baking soda, and salt.
  4. Pour wet ingredients into dry ingredients. Mix until just combined.
  5. Fold in chocolate chips or nuts, if using.
  6. Fill muffin cups 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Let cool before serving.

Notes

  • Use very ripe bananas for best flavor.
  • Do not overmix the batter.
