Easy and quick blender banana muffins without Greek yogurt.
Ingredients
- 2 ripe bananas
- 2 large eggs
- 1/4 cup milk
- 1/4 cup oil
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: chocolate chips or nuts
Instructions
- Preheat oven to 375°F (190°C).
- Combine bananas, eggs, milk, oil, and vanilla in a blender. Blend until smooth.
- In a separate bowl, whisk together flour, sugar, baking soda, and salt.
- Pour wet ingredients into dry ingredients. Mix until just combined.
- Fold in chocolate chips or nuts, if using.
- Fill muffin cups 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Use very ripe bananas for best flavor.
- Do not overmix the batter.
- Adjust baking time based on your oven.
