Description
These blueberry oat snack bars are a healthy-leaning winter treat.
Ingredients
- 1 cup rolled oats
- 1/2 cup almond flour
- 1/4 cup chia seeds
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- Combine oats, almond flour, chia seeds, cinnamon, and salt in a bowl.
- In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla.
- Pour wet ingredients into dry ingredients and mix well.
- Gently fold in blueberries.
- Press the mixture into an 8×8 inch baking pan lined with parchment paper.
- Bake for 20-25 minutes, or until golden brown.
- Let cool completely before cutting into bars.
Notes
- You can substitute other berries for blueberries.
- Store bars in an airtight container.
