These blueberry oat snack bars are a healthy-leaning winter treat.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 cup fresh or frozen blueberries


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine oats, almond flour, chia seeds, cinnamon, and salt in a bowl.
  3. In a separate bowl, whisk together maple syrup, melted coconut oil, and vanilla.
  4. Pour wet ingredients into dry ingredients and mix well.
  5. Gently fold in blueberries.
  6. Press the mixture into an 8×8 inch baking pan lined with parchment paper.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Let cool completely before cutting into bars.
