Description
A simple and delicious roasted butternut squash recipe with a sweet glaze made from brown sugar.
Ingredients
- 1 medium butternut squash (about 2 lbs)
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cinnamon
Instructions
- Preheat oven to 400°F (200°C).
- Peel and cube butternut squash into 1-inch pieces.
- Toss squash with olive oil, brown sugar, salt, pepper, and cinnamon.
- Spread evenly on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized.
- Serve warm.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra crispiness, broil for 1-2 minutes at the end.
