Description

Ingredients

  • 1 medium butternut squash (about 2 lbs)
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cinnamon


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube butternut squash into 1-inch pieces.
  3. Toss squash with olive oil, brown sugar, salt, pepper, and cinnamon.
  4. Spread evenly on a baking sheet.
  5. Roast for 25-30 minutes until tender and caramelized.
