Description
A creamy and spicy buffalo chicken soup with tender chicken, bold flavors, and a hint of tanginess.
Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup hot sauce
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/2 cup celery, diced
- 1/2 cup carrots, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup blue cheese crumbles (optional)
Instructions
- Melt butter in a pot over medium heat.
- Add celery, carrots, onion, and garlic. Sauté for 5 minutes.
- Pour in chicken broth, hot sauce, salt, pepper, and paprika. Bring to a boil.
- Reduce heat and let simmer for 10 minutes.
- Stir in shredded chicken and heavy cream. Cook for 5 more minutes.
- Garnish with blue cheese crumbles if desired.
Notes
- Adjust hot sauce for more or less spice.
- Store leftovers in the fridge for up to 3 days.
- Serve with crusty bread or tortilla chips.
