Description
A comforting casserole with chicken, rice, and cheddar cheese.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 cup uncooked long-grain rice
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 cup shredded cheddar cheese, plus more for topping
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook chicken until browned. Season with salt and pepper.
- Add onion and garlic to the skillet and cook until softened.
- Stir in rice, chicken broth, and cream of mushroom soup.
- Bring to a boil, then reduce heat and simmer for 5 minutes.
- Transfer mixture to a baking dish.
- Top with cheddar cheese.
- Bake for 30-40 minutes, or until rice is cooked and cheese is melted and bubbly.
