Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until softened.
  2. Add diced potatoes and broth, bring to a boil. Reduce heat and simmer until potatoes are tender.
  3. Use a potato masher to slightly break down the potatoes for a creamy texture.
  4. Stir in heavy cream, cheddar cheese, thyme, and rosemary. Cook until cheese melts and soup thickens.
  5. Season with salt and pepper. Garnish with fresh parsley before serving.
