Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups peeled and diced potatoes
  • 1/2 cup shredded carrots
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup sour cream
  • 1 tsp mustard
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic, cook until softened.
  3. Stir in chicken broth, potatoes, and carrots. Bring to a boil, then reduce heat and simmer for 10-12 minutes.
  4. In a separate bowl, whisk flour into milk until smooth. Gradually add to the soup, stirring constantly.
  5. Cook for 5 more minutes until slightly thickened.
  6. Reduce heat to low. Stir in cheese, sour cream, and mustard until cheese is melted.
  7. Season with salt and pepper. Serve hot.
