A hearty and creamy soup that combines the flavors of a classic cheeseburger into a comforting bowl.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups peeled and diced potatoes
- 1/2 cup shredded carrots
- 1/4 cup all-purpose flour
- 2 cups milk
- 2 cups shredded cheddar cheese
- 1/4 cup sour cream
- 1 tsp mustard
- Salt and pepper to taste
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat.
- Add onion and garlic, cook until softened.
- Stir in chicken broth, potatoes, and carrots. Bring to a boil, then reduce heat and simmer for 10-12 minutes.
- In a separate bowl, whisk flour into milk until smooth. Gradually add to the soup, stirring constantly.
- Cook for 5 more minutes until slightly thickened.
- Reduce heat to low. Stir in cheese, sour cream, and mustard until cheese is melted.
- Season with salt and pepper. Serve hot.
Notes
- Use lean ground beef for a lighter version.
- For extra flavor, add crumbled bacon on top.
- Store leftovers in an airtight container for up to 3 days.
