Description

A delicious and easy low-carb dinner featuring chicken and cauliflower in a cheesy sauce.


Ingredients

  • 1 head cauliflower, cut into florets
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Steam or boil cauliflower florets until tender, about 8-10 minutes.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add chicken and cook until browned.
  5. Add onion and garlic; cook until softened.
  6. Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
  7. Bring to a simmer and cook for 5 minutes.
  8. Add cauliflower to the skillet.
  9. Pour mixture into a baking dish.
  10. Top with cheddar cheese.
  11. Bake for 20-25 minutes, or until cheese is melted and bubbly.

Notes

  • You can add other vegetables like broccoli or bell peppers.
  • Feel free to use different types of cheese.
