Description
A delicious and easy low-carb dinner featuring chicken and cauliflower in a cheesy sauce.
Ingredients
- 1 head cauliflower, cut into florets
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Steam or boil cauliflower florets until tender, about 8-10 minutes.
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned.
- Add onion and garlic; cook until softened.
- Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Bring to a simmer and cook for 5 minutes.
- Add cauliflower to the skillet.
- Pour mixture into a baking dish.
- Top with cheddar cheese.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
Notes
- You can add other vegetables like broccoli or bell peppers.
- Feel free to use different types of cheese.
- Serve with a side salad for a complete meal.
