Description
A comforting casserole with chicken, potatoes, and cheese.
Ingredients
- 2 lbs boneless, skinless chicken breasts, cubed
- 2 lbs potatoes, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Toss potatoes with olive oil, salt, and pepper. Bake for 20 minutes.
- Sauté onion and garlic. Add chicken and cook until browned.
- Combine soup, milk, and half the cheese.
- Add chicken mixture and potatoes to the sauce.
- Pour into a baking dish. Top with remaining cheese.
- Bake for 30 minutes, or until bubbly and chicken is cooked.
Notes
- You can add other vegetables, like carrots or peas.
- Use different types of cheese for variety.
- Serve with a side salad.
