Description
A simple and satisfying ground beef, rice, and cheese casserole. This dish is perfect for a weeknight dinner.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can (10.75 ounces) condensed tomato soup
- 1 cup uncooked white rice
- 2 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown the ground beef and onion over medium heat. Drain off any excess grease.
- Stir in the condensed tomato soup, uncooked rice, water, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes, stirring occasionally.
- Remove from heat. Stir in half of the shredded cheddar cheese.
- Pour the mixture into a 9×13 inch baking dish.
- Top with the remaining cheddar cheese.
- Bake for 20-25 minutes, or until bubbly and the cheese is melted.
Notes
- For a creamier casserole, you can substitute a can of condensed cream of mushroom soup for the tomato soup.
- Add your favorite vegetables like peas or corn for extra flavor and nutrition.
- Top with a sprinkle of paprika before baking for added color.
