Easy and delicious chewy pumpkin cookies with a soft texture and warm spices.
Ingredients
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 cups all-purpose flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix pumpkin, sugar, oil, and egg until smooth.
- Add flour, baking powder, cinnamon, salt, and vanilla. Stir until combined.
- Fold in walnuts if using.
- Drop spoonfuls of dough onto a greased baking sheet.
- Bake for 12-15 minutes until edges are lightly browned.
- Cool on a wire rack before serving.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, add a pinch of nutmeg or cloves.
- Use fresh pumpkin puree if available.
