Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 large sweet potato, peeled and diced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Stir in paprika, garlic powder, salt, and pepper.
- Add diced sweet potato and chicken broth to the skillet. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes, or until sweet potatoes are tender.
- Meanwhile, cook white rice according to package directions.
- Serve the chicken and sweet potato mixture over the cooked rice.
Notes
- For a spicier dish, add a pinch of cayenne pepper.
- You can substitute brown rice for white rice for a healthier option.
