Description
A comforting and easy chicken burrito casserole that brings all the flavors of your favorite burritos into a simple baked dish. Perfect for a weeknight meal.
Ingredients
- 1 pound cooked shredded chicken
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 (1.25 ounce) packet taco seasoning
- 1 cup salsa
- 8 (8 inch) flour tortillas, cut into strips
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, chopped cilantro, sliced jalapenos
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, black beans, diced tomatoes and green chilies, taco seasoning, and salsa. Mix well.
- Add half of the tortilla strips to the chicken mixture and stir to combine.
- Spread half of the cheese mixture over the bottom of a 9×13 inch baking dish.
- Pour the chicken and tortilla mixture evenly over the cheese.
- Top with the remaining tortilla strips and the remaining cheese.
- Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
- Let stand for 5 minutes before serving.
- Serve with your favorite toppings.
Notes
- You can use rotisserie chicken for convenience.
- Adjust the amount of salsa or taco seasoning to your spice preference.
- This casserole can be assembled ahead of time and baked just before serving.
