Description

A comforting and easy chicken burrito casserole that brings all the flavors of your favorite burritos into a simple baked dish. Perfect for a weeknight meal.


Ingredients

  • 1 pound cooked shredded chicken
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 (1.25 ounce) packet taco seasoning
  • 1 cup salsa
  • 8 (8 inch) flour tortillas, cut into strips
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, chopped cilantro, sliced jalapenos


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, diced tomatoes and green chilies, taco seasoning, and salsa. Mix well.
  3. Add half of the tortilla strips to the chicken mixture and stir to combine.
  4. Spread half of the cheese mixture over the bottom of a 9×13 inch baking dish.
  5. Pour the chicken and tortilla mixture evenly over the cheese.
  6. Top with the remaining tortilla strips and the remaining cheese.
  7. Bake for 20-25 minutes, or until the casserole is heated through and the cheese is melted and bubbly.
  8. Let stand for 5 minutes before serving.
  9. Serve with your favorite toppings.

Notes

  • You can use rotisserie chicken for convenience.
  • Adjust the amount of salsa or taco seasoning to your spice preference.
  • This casserole can be assembled ahead of time and baked just before serving.
