Chicken Meatballs are juicy, flavorful & made with just 7 ingredients! A delicious, feel-good dinner that’s perfect for meal prep or weeknight meals.
Ingredients
- 1 lb ground chicken
- 1 cup breadcrumbs
- 2 eggs
- 1 onion, minced
- 3 cloves garlic, minced
- 1/4 cup chopped parsley
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, eggs, minced onion, minced garlic, chopped parsley, salt, and black pepper. Use your hands or a fork to mix the ingredients thoroughly until they are well-incorporated.
- Scoop out a small amount of the mixture and roll it between your palms to form a compact meatball, about 1-inch in diameter. Place the meatball on the prepared baking sheet, and repeat this process until all the mixture has been used.
- Bake the meatballs in the preheated oven for 18-22 minutes, or until they are cooked through and lightly browned on the outside.
- Once the meatballs are cooked, remove them from the oven and let them cool for a few minutes before serving.
