Description

A comforting and hearty chicken and potato chowder made in a slow cooker or instant pot.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 lb potatoes, peeled and diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup milk or heavy cream
  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped fresh parsley (optional)


Instructions

  1. Place chicken, potatoes, onion, carrots, celery, and chicken broth in a slow cooker or instant pot.
  2. If using a slow cooker, cook on low for 6-8 hours or on high for 3-4 hours. If using an instant pot, cook on high pressure for 8 minutes, then natural pressure release for 10 minutes.
  3. In a small bowl, whisk together milk (or cream) and flour until smooth.
  4. Stir the milk mixture into the chowder during the last 30 minutes of cooking.
  5. Season with salt, pepper, and garlic powder.
  6. Garnish with fresh parsley, if desired.

Notes

  • For a thicker chowder, add more flour.
  • You can substitute ground turkey or beef for the chicken.
  • Add other vegetables like corn or peas.
