Description
A simple and satisfying one-pot chicken and rice dish perfect for a weeknight meal.
Ingredients
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup long-grain rice, rinsed
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup frozen peas
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken and cook until browned on all sides.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic, rice, chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
- Stir in peas and cook for 2 minutes more, or until heated through.
- Serve hot.
Notes
- You can substitute chicken thighs for chicken breasts.
- Add other vegetables like carrots or celery.
- Garnish with fresh parsley.
