Description

A simple and satisfying one-pot chicken and rice dish perfect for a weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen peas


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned on all sides.
  3. Add onion and cook until softened, about 5 minutes.
  4. Stir in garlic, rice, chicken broth, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is cooked and liquid is absorbed.
  6. Stir in peas and cook for 2 minutes more, or until heated through.
  7. Serve hot.

Notes

  • You can substitute chicken thighs for chicken breasts.
