Ingredients

  • 1 tbsp olive oil
  • 1 lb chicken sausage, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 ½ cups orzo pasta
  • 3 cups chicken broth
  • 1 head broccoli florets
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: grated Parmesan cheese for serving


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat.
  3. Add the sliced chicken sausage and cook until browned on both sides. Remove sausage from skillet and set aside.
  4. Add chopped onion to the same skillet and cook until softened, about 3-5 minutes.
  5. Add minced garlic and cook for 1 minute more until fragrant.
  6. Stir in the orzo pasta, coating it in the oil and aromatics.
  7. Pour in the chicken broth, salt, and pepper. Bring to a simmer.
  8. Return the browned sausage to the skillet.
  9. Stir in the broccoli florets.
  10. Cover the skillet tightly with foil or a lid.
  11. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the orzo is cooked through and the liquid is mostly absorbed.
  12. Remove from oven, stir, and serve hot, topped with Parmesan cheese if desired.
