Description

A simplified version of Chicken Tikka Masala, baked in a casserole for easy preparation.


Ingredients

  • 2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1 cup tomato sauce
  • 1/2 cup plain yogurt
  • 1 tbsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1/2 tsp cayenne pepper (or to taste)
  • Salt and pepper to taste
  • 1 cup cooked basmati rice
  • Fresh cilantro, chopped (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and ginger and cook for 1 minute more.
  4. Add chicken and cook until lightly browned.
  5. Stir in crushed tomatoes, heavy cream, tomato sauce, yogurt, garam masala, turmeric, cumin, and cayenne pepper. Season with salt and pepper. Bring to a simmer.
  6. Pour the chicken mixture into a casserole dish.
  7. Sprinkle cooked rice over the top.
  8. Bake for 20-25 minutes, or until the chicken is cooked through and the sauce is bubbly.
  9. Garnish with fresh cilantro and serve.

Notes

  • You can use chicken breasts instead of thighs. Adjust cooking time as needed.
  • For a spicier dish, add more cayenne pepper.
  • Serve with naan bread for a complete meal.
