Description

A simple and healthy chicken and vegetable casserole without cheese.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add chicken and cook until browned.
  4. Add onion, carrots, and celery. Cook until softened.
  5. Stir in garlic, diced tomatoes, chicken broth, mixed vegetables, thyme, salt, and pepper.
  6. Bring to a simmer.
  7. Pour mixture into a baking dish.
  8. Bake for 30-40 minutes, or until chicken is cooked through and vegetables are tender.

Notes

  • You can add other vegetables you like.
  • Serve hot.
