Description
A simple and healthy chicken and vegetable casserole without cheese.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic, diced tomatoes, chicken broth, mixed vegetables, thyme, salt, and pepper.
- Bring to a simmer.
- Pour mixture into a baking dish.
- Bake for 30-40 minutes, or until chicken is cooked through and vegetables are tender.
Notes
- You can add other vegetables you like.
- Serve hot.
