Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried Italian seasoning


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides.
  3. Add onion and garlic to the skillet and cook until softened, about 3-4 minutes.
  4. Stir in red bell pepper, yellow bell pepper, broccoli, and cauliflower.
  5. Season with salt, pepper, and Italian seasoning.
  6. Cover and cook for 8-10 minutes, or until vegetables are tender-crisp.
