Description
A simple and healthy chicken and vegetable skillet meal that is low in carbohydrates.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried Italian seasoning
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Add onion and garlic to the skillet and cook until softened, about 3-4 minutes.
- Stir in red bell pepper, yellow bell pepper, broccoli, and cauliflower.
- Season with salt, pepper, and Italian seasoning.
- Cover and cook for 8-10 minutes, or until vegetables are tender-crisp.
- Serve hot.
Notes
- For a spicier dish, add a pinch of red pepper flakes.
- You can substitute other low-carb vegetables like zucchini or asparagus.
- Serve with a side salad for a complete meal.
