Description

Cinnamon Sugar Palmiers are simple, elegant cookies made from puff pastry. They have a sweet, crispy texture and a warm cinnamon flavor, perfect for any occasion. This recipe requires only two main ingredients.


Ingredients

  • 2 sheets puff pastry, thawed
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon


Instructions

  1. Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
  2. In a small bowl, mix together the granulated sugar and ground cinnamon.
  3. Unfold one sheet of puff pastry onto a lightly floured surface. Sprinkle about half of the cinnamon-sugar mixture evenly over the pastry, pressing it down gently with your hands or a rolling pin.
  4. Fold the two longer sides of the pastry towards the center, meeting in the middle. Then, fold each side in half again, as if you were closing a book. You should have a long, layered strip.
  5. Using a sharp knife, cut the pastry strip into 1/2-inch thick slices.
  6. Place the slices cut-side up onto the prepared baking sheets, leaving about 2 inches between them.
  7. Bake for 12-15 minutes, or until golden brown and caramelized.
  8. Carefully flip the palmiers and bake for another 5-7 minutes, until the other side is also golden brown and crisp.
  9. Remove from the oven and let cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. Repeat with the second sheet of puff pastry.

  • Ensure your puff pastry is fully thawed but still cold for best results.
  • For extra crispiness, you can bake them a bit longer, watching carefully to prevent burning.
