Description
Soft and delicious coffee cake with cinnamon swirl.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- For the cinnamon swirl:
- 1/2 cup granulated sugar
- 2 tablespoons ground cinnamon
- 1/4 cup chopped pecans (optional)
- For the glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter and sugar. Beat in eggs one at a time, then stir in vanilla.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.
- In a small bowl, combine cinnamon swirl ingredients.
- Pour half of the batter into the prepared pan. Sprinkle with half of the cinnamon sugar mixture.
- Top with the remaining batter and sprinkle with the remaining cinnamon sugar mixture.
- Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before glazing.
- For the glaze: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
Notes
- You can add a streusel topping for extra texture.
- Store leftovers in an airtight container.
