Description

Soft and delicious coffee cake with cinnamon swirl.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • For the cinnamon swirl:
  • 1/2 cup granulated sugar
  • 2 tablespoons ground cinnamon
  • 1/4 cup chopped pecans (optional)
  • For the glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together butter and sugar. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients.
  5. In a small bowl, combine cinnamon swirl ingredients.
  6. Pour half of the batter into the prepared pan. Sprinkle with half of the cinnamon sugar mixture.
  7. Top with the remaining batter and sprinkle with the remaining cinnamon sugar mixture.
  8. Bake for 30-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool completely before glazing.
  10. For the glaze: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.

Notes

  • You can add a streusel topping for extra texture.
