Ingredients

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups egg noodles
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes until softened.
  3. Stir in garlic and cook for 1 minute.
  4. Pour in chicken broth and bring to a boil.
  5. Add chicken, thyme, salt, and pepper. Reduce heat and simmer for 10 minutes.
  6. Stir in egg noodles and cook for 8 minutes until tender.
  7. Garnish with fresh parsley before serving.

Notes

  • Use rotisserie chicken for quick prep.
  • Add more broth if soup thickens too much.
