Description
A comforting and classic chicken noodle soup that is easy to make and perfect for any occasion.
Ingredients
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups egg noodles
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes until softened.
- Stir in garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil.
- Add chicken, thyme, salt, and pepper. Reduce heat and simmer for 10 minutes.
- Stir in egg noodles and cook for 8 minutes until tender.
- Garnish with fresh parsley before serving.
Notes
- Use rotisserie chicken for quick prep.
- Add more broth if soup thickens too much.
- Store leftovers in an airtight container for up to 3 days.
