Ingredients
- 2 cups corn kernels (fresh or frozen)
- 1/4 cup mayonnaise
- 2 tablespoons cotija cheese, crumbled
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt to taste
- Fresh cilantro, chopped, for garnish
Instructions
- If using frozen corn, cook according to package directions. Drain well.
- In a medium bowl, combine corn kernels, mayonnaise, cotija cheese, lime juice, chili powder, and smoked paprika.
- Stir until the corn is evenly coated.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.

- For extra spice, add a pinch of cayenne pepper.
