Description
Sweet potatoes are sautéed with veggies and spices for a clean-eating breakfast.
Ingredients
- 2 medium sweet potatoes, peeled and diced
- 1 red bell pepper, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Optional: eggs for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sweet potatoes, red pepper, and onion. Cook until softened, about 8-10 minutes.
- Stir in garlic, chili powder, and cumin. Cook for 1 minute more.
- Season with salt and pepper.
- Serve as is, or top with eggs.
