Ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cloves garlic, minced
- 8 cups vegetable broth
- 1 cup cooked wild rice
- 1/2 cup chopped fresh parsley
- 1/4 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth and bring to a simmer.
- Stir in cooked wild rice, parsley, and thyme.
- Season with salt and pepper to taste.
- Simmer for at least 15 minutes to allow flavors to meld.
- Serve hot.

- You can use pre-cooked wild rice for a quicker preparation.
