Description
A warm and hearty crockpot soup featuring potatoes as the star ingredient, perfect for chilly days.
Ingredients
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
- 1 cup milk
- 2 tbsp butter
Instructions
- Place potatoes, onion, carrots, celery, broth, salt, pepper, thyme, and bay leaf in the crockpot.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove bay leaf. Stir in milk and butter.
- Cook for an additional 15 minutes.
- Serve hot.

- For a creamier texture, mash some potatoes before adding milk.
- Add cooked chicken or ham for extra protein.
