These Cranberry Bars are a delightful way to use leftover cranberry sauce. They offer a sweet and tart flavor with a tender crumb, perfect for any occasion.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups cranberry sauce (canned or homemade)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread half of the batter evenly into the prepared baking pan.
- Spoon the cranberry sauce over the batter in an even layer.
- Crumble the remaining batter over the cranberry sauce.
- Bake for 35-45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool completely in the pan before cutting into bars.
Notes
- For a crunchier topping, you can add a sprinkle of chopped nuts over the crumbled batter before baking.
- Ensure your cranberry sauce is not too watery. If it is, you can drain off some of the excess liquid.
