Description

A no-bake icebox cake with layers of graham crackers, creamy filling, and a tart cranberry orange topping. Perfect for holidays.


Ingredients

  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/4 cup orange juice
  • 1 teaspoon orange zest
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (10 ounce) package frozen cranberries, thawed
  • 1/2 cup granulated sugar
  • 1/4 cup water


Instructions

  1. Whip heavy cream and powdered sugar until stiff peaks form.
  2. In a separate bowl, beat cream cheese, vanilla extract, orange juice, and orange zest until smooth.
  3. Fold whipped cream into cream cheese mixture.
  4. Spread half of the cream mixture over a layer of graham crackers in a 9×13 inch baking dish.
  5. Repeat layers with graham crackers and remaining cream mixture.
  6. In a saucepan, combine thawed cranberries, granulated sugar, and water.
  7. Cook over medium heat, stirring, until cranberries burst and sauce thickens.
  8. Cool sauce completely.
  9. Pour cranberry orange sauce over the top layer of the cake.
  10. Chill for at least 4 hours, or overnight.
