Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/2 cup fresh or frozen cranberries
- 1 tablespoon orange zest
- 2/3 cup heavy cream, plus more if needed
- 1 large egg
- For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons fresh orange juice
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in the cranberries and orange zest.
- In a separate small bowl, whisk together the heavy cream and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. If the dough seems too dry, add a little more cream, one tablespoon at a time.
- Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round.
- Cut the round into 8 wedges.
- Place the wedges on the prepared baking sheet.
- Bake for 15-18 minutes, or until golden brown and cooked through.
- While the scones are cooling, prepare the glaze. In a small bowl, whisk together the powdered sugar and orange juice until smooth. Add more juice if needed to reach desired drizzling consistency.
- Drizzle the glaze over the cooled scones.
