Description
A light and flavorful Cream of Spring Vegetable Soup.
Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 cup fresh asparagus, chopped
- 1 cup fresh peas
- 1 cup fresh spinach
- 1/2 cup heavy cream (or plant-based cream)
- Salt and pepper to taste
Instructions
- Sauté onion, carrots, and celery in olive oil.
- Add vegetable broth and simmer.
- Add asparagus and peas. Cook until tender.
- Stir in spinach until wilted.
- Blend soup until smooth.
- Stir in cream. Season with salt and pepper.
- Serve hot.

- Feel free to add other spring vegetables.
- Adjust cream to your preference.
