Ingredients

  • 4 large baked potatoes, peeled and cubed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh chives


Instructions

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add cubed potatoes and broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Use a blender or immersion blender to puree the soup until smooth.
  4. Stir in heavy cream and shredded cheddar cheese until melted.
  5. Season with salt and pepper. Serve hot, garnished with fresh chives.
