Ingredients

  • Chicken breasts (1.5 lbs)
  • Olive oil (1 tbsp)
  • Onion, chopped (1 medium)
  • Carrots, chopped (2)
  • Celery, chopped (2 stalks)
  • Garlic, minced (2 cloves)
  • Chicken broth (8 cups)
  • Orzo pasta (1 cup)
  • Heavy cream (1 cup)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. If using stovetop, heat olive oil in a pot. If using a slow cooker, skip this step.
  2. Add onion, carrots, and celery. Cook until softened.
  3. Add garlic. Cook for another minute.
  4. Add chicken broth and chicken breasts.
  5. If using stovetop, bring to a boil, then simmer. If using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours.
  6. Remove chicken. Shred or dice it.
  7. Add orzo to the soup. Cook until tender.
  8. Stir in cooked chicken and heavy cream.
  9. Season with salt and pepper.
  10. Garnish with parsley.
