This recipe guides you to make a comforting Creamy Chicken Orzo Soup. You can prepare it on the stovetop or in a slow cooker.
Ingredients
- Chicken breasts (1.5 lbs)
- Olive oil (1 tbsp)
- Onion, chopped (1 medium)
- Carrots, chopped (2)
- Celery, chopped (2 stalks)
- Garlic, minced (2 cloves)
- Chicken broth (8 cups)
- Orzo pasta (1 cup)
- Heavy cream (1 cup)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- If using stovetop, heat olive oil in a pot. If using a slow cooker, skip this step.
- Add onion, carrots, and celery. Cook until softened.
- Add garlic. Cook for another minute.
- Add chicken broth and chicken breasts.
- If using stovetop, bring to a boil, then simmer. If using a slow cooker, cook on low for 6-8 hours or high for 3-4 hours.
- Remove chicken. Shred or dice it.
- Add orzo to the soup. Cook until tender.
- Stir in cooked chicken and heavy cream.
- Season with salt and pepper.
- Garnish with parsley.
Notes
- You can add other vegetables, like zucchini or spinach.
- Adjust the amount of cream to your preference.
- Rotisserie chicken is a good alternative.
