Ingredients

  • 2 tablespoons butter
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups corn kernels (fresh or frozen)
  • 4 cups vegetable broth
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Melt butter in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Stir in garlic and cook for 1 minute more.
  4. Add corn and vegetable broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Stir in milk and heavy cream. Heat through, but do not boil.
  6. Season with salt and pepper.
  7. Garnish with fresh parsley before serving.

Notes

  • For a thicker chowder, you can mash some of the corn kernels against the side of the pot.
  • Add cooked bacon bits or shredded chicken for a non-vegetarian option.
