A delicious and healthy Creamy Dijon Chicken & Brown Rice Bowl.


Ingredients

  • Chicken breast: 6 oz
  • Brown rice: 1 cup cooked
  • Dijon mustard: 2 tbsp
  • Heavy cream: 1/4 cup
  • Olive oil: 1 tbsp
  • Garlic: 2 cloves, minced
  • Salt and pepper to taste
  • Broccoli florets: 1 cup


Instructions

  1. Cook brown rice according to package directions.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a pan. Cook chicken until done. Set aside.
  4. In the same pan, sauté garlic.
  5. Whisk in Dijon mustard and heavy cream. Simmer.
  6. Add cooked chicken to the sauce.
  7. Steam broccoli.
  8. Assemble the bowl: rice, chicken and sauce, broccoli.
