A delicious and easy creamy low-carb chicken casserole.
Ingredients
- 2 lbs boneless, skinless chicken breasts, cooked and shredded
- 1 (8 ounce) package cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup cooked broccoli florets
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, cream cheese, sour cream, cheddar cheese, onion, garlic, salt, and pepper.
- Stir in broccoli.
- Pour mixture into a baking dish.
- Bake for 20-25 minutes, or until bubbly and heated through.
- Let stand for a few minutes before serving.
Notes
- You can substitute other vegetables like cauliflower or green beans.
- Add a sprinkle of paprika for extra flavor.
- For a spicier casserole, add a pinch of red pepper flakes.
