1 lb Chicken breast
1 can (13.5 oz) Coconut milk
2 cups cooked White rice
3 cloves Garlic, minced
2 tbsp Olive oil
1 1/2 cups Chicken broth
Spices (salt, pepper, paprika) to taste
Instructions
Heat the olive oil in a large skillet over medium-high heat. Add the chicken breast, seasoned with salt, pepper, and paprika. Cook until golden brown and fully cooked, about 6-8 minutes per side.
Remove the chicken and set it aside. In the same skillet, add minced garlic and sauté until fragrant.
Add the coconut milk and chicken broth to the skillet, stirring to combine. Bring to a simmer.
Slice the cooked chicken and return it to the skillet, allowing the flavors to meld for about 5 minutes.
Serve the creamy chicken mixture over a bed of cooked rice, garnishing with fresh herbs if desired.
