Description

Classic Italian spaghetti carbonara with crispy pancetta and creamy Parmesan sauce


Ingredients

  • 12 oz spaghetti
  • 4 oz pancetta, diced
  • 2 eggs + 1 yolk
  • ½ cup grated Parmesan
  • ½ tsp black pepper


Instructions

  1. Cook spaghetti in boiling salted water until al dente
  2. Fry pancetta in a pan until crispy
  3. Whisk eggs, yolk, Parmesan and pepper in a bowl
  4. Drain pasta, reserving ½ cup cooking water
  5. Immediately toss hot pasta with pancetta and egg mixture
  6. Add reserved pasta water to create creamy sauce
  7. Serve immediately with extra Parmesan

Notes

  • Use freshly grated Parmesan for best results
  • Work quickly when combining ingredients to prevent scrambled eggs
