A comforting and easy Creamy Spinach & Chicken Bake.
Ingredients
- Chicken (boneless, skinless): 1.5 lbs
- Frozen spinach: 10 oz, thawed and squeezed dry
- Cream cheese: 8 oz, softened
- Heavy cream: 1/2 cup
- Grated Parmesan cheese: 1/2 cup, plus extra for topping
- Garlic: 2 cloves, minced
- Onion powder: 1 tsp
- Salt and pepper: To taste
- Olive oil: 1 tbsp
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken with salt, pepper, and onion powder.
- Heat olive oil in a skillet over medium-high heat.
- Cook chicken until browned on both sides.
- In a bowl, combine cream cheese, heavy cream, Parmesan cheese, garlic, and spinach.
- Spread spinach mixture in a baking dish.
- Place chicken on top of the spinach mixture.
- Bake for 25-30 minutes, or until chicken is cooked through.
- Top with extra Parmesan cheese and broil for a minute, if desired.
Notes
- You can use chicken breasts or thighs.
- Adjust the amount of spinach to your liking.
- Serve with a side of rice or vegetables.
